Deep Cleaning of Catering and Food Production Facilities

The increase in Food Hygiene and Safety Regulations in recent years has reinforced the need for management to ensure thorough kitchen deep cleaning programmes are in place to maintain high standards of food hygiene & safety in catering and food production facilities.

Meeting ‘due diligence’ requirements

The Food Hygiene Regulations and the Food Safety Act cover all premises where food is prepared or sold. For a hygiene and safety regime to comply fully with the due diligence provisions, periodic deep cleaning should be in place for those installations and equipment which are not fully cleaned as part of the daily cleaning routines. Dirty Ductwork

Dirty Ductwork

On a fundamental level, the NHS constitution requires that patients are treated by an organisation that provides its services in a clean and safe environment.  Uncleaned ventilation systems not only aid the spread of common infections like fire and the common cold but, as Dr Shabha has shown, play an important role in spreading the potentially fatal HCAIs.

With more hospitals becoming ‘airtight’ ventilation systems are relied on more and more to provide clean, unpolluted air.  They can only consistently delivery this if subjected to regular, thorough professional cleaning.

Another Fire at Burger King restaurant

Monday, July 19th, 2010

A major fire in the Liverpool Street Station Burger King restaurant brought trains, underground and roads to a standstill.  The BBC reported that the fire involved the ventilation ducting (inadequate duct cleaning), almost certainly the grease extract system from the kitchen.  The extent of the damage was considerable with 40 firefighters being needed to get the fire under control.  This is yet another instance of a fire in a restaurant starting in the kitchen and quickly spreading because flammable grease deposits extracted from the cooking operation had not been removed from the internal surfaces of the extract ducting.  Luckily, once again, there were no fatalities or injuries.
