Duct cleaning in restaurants not a priority for ‘Scores on the Doors’.

A sure sign of a dirty kitchen in pubs and restaurants is an uncleaned canopy and grease extract above the cooking range.

Duct cleaning is still not a priority for ‘Scores on the Doors’ – a Government website that allows consumers to make informed choices about the places in which they eat and to encourage businesses to improve hygiene standards.

Richard Norman, Managing Director of specialist ventilation system cleaning company, Indepth Hygiene asks why, as part of the ‘Scores on the Doors’ criteria, that the assessment of Grease Extract Ductwork Systems and duct cleaning procedures is not an integral part of the restaurant review process.

It is amazing that one of the key signs of a dirty kitchen is often completely overlooked: the ventilation canopy (the area above the cooking range) and the connected ductwork system can, if not cleaned , lead to the oil and grease from the cooking process dripping back from the canopy and filters onto the food cooking below.”

If the ductwork lacks access panels to enable sufficient cleaning to be undertaken, or you can see evidence of grease residues on the outside of the ductwork, the system will have never been cleaned. FACT.  Whilst we support the notion of ‘Scores On The Doors’, surely part of their reviewing activities should be to also focusing on ductwork and duct cleaning in restaurants as a duty for their customers who refer to this site”.

Also, If you let the fire brigade know, you will be doing everyone a favour because uncleaned grease extract systems are,  according to the Fire  Services, also the biggest risk of fire and loss of life in most commercial buildings  in the UK.

Grease Extract Ductwork inspections – A guide for Fire Authorities

How long will the disconnect continue between the frequency of fires in restaurant grease extracts and the low priority given to their inspection by Fire Authority inspectors?  In the last few weeks alone there have been fires involving the extract ductwork at Burger King Liverpool Street Station and The Roka restaurant in Soho.

Another Fire in Ducting Closes Restaurant for Five Weeks

Following hot on the heels of the Burger King fire at Liverpool Street station, a fire at the Roka restaurant in London’s Soho means it will be closed for five weeks.  More than 50 guests were evacuated from the restaurant which required four fire engines and twenty firefighters to get the blaze under control.  The rapid spread of the fire was almost certainly aided by grease in the extract ducting which was destroyed from the ground floor to the roof.

This is yet another instance where a restaurant kitchen fire was made more serious and destructive because it involved the extract ducting.  Yet still restaurant owners and managers fail to make sure the ducting is cleaned (duct cleaning) of highly flammable grease deposits.

They have a legal reason to carry out duct cleaning – the Fire Safety Order which has been on the statute book since 2006.  Failure to comply by taking all possible steps to identify and eliminate risks to building occupants carries big fines and should there be a fatality, criminal prosecution and possible imprisonment.  Property Insurers are playing their part by demanding extract system ducting is cleaned in its entirety i.e. from kitchen canopy to extract to atmosphere.  Ironically perhaps it is the Fire Authorities themselves who are the weak link.  They have a responsibility under the Fire Safety Order to inspect premises to ensure all possible measures have been taken to protect building occupants from the dangers of fire.  Having seen their inspection protocols there is no doubt that rarely are grease extract systems given anything like the inspection importance that their potential to assist in developing the spread of a fire calls for.
